A Global Worldview- Singapore (Part 2)
Last week, we followed Arjun’s journey into Singapore’s green heart. This week, we dive into the SMELL of this skyline.
Day 2 in Singapore, Arjun followed his nose to Lau Pa Sat, where the air pulsed with satay smoke and clinking chopsticks. A stranger nudged him toward the best stall — “Table 7. Trust me.” And just like that, lunch became language.
In Singapore, food isn’t a transaction. It’s the national love language. Meetings start with kopi orders, friendships are cemented over chilli crab, and if someone tells you their favorite nasi lemak spot, it’s basically a declaration of trust.
Arjun quickly learned that to understand this city, you eat your way through it.
Maxwell Food Centre — For Hainanese chicken rice that locals still queue for at Tian Tian. Bring tissues — not for your nose, but to "chope" your seat.
Haji Lane — Where mezze meets laksa, and your dessert is likely a rainbow kueh from a Peranakan auntie’s cart.
Geylang — For late-night frog porridge, because sleep is optional but supper is sacred.
Tiong Bahru Bakery — Where croissants are French but the uncles reading newspapers next to you are very much Singaporean.
Hill Street Tai Hwa Pork Noodle — A Michelin-starred bowl of bak chor mee that costs less than your morning coffee back home.
Each dish came with a story, a tradition, and often — unsolicited but welcome — a passionate debate from a local about why that stall was the best in town. Even the airport served better laksa than half the restaurants Arjun had eaten at in London.
What he discovered wasn’t just Singapore’s taste for food — it was its identity in food. In every bowl, you find migration, resilience, precision, and pride. The city feeds you well, yes — but more than that, it tells you who it is with every bite.
